I'm sorry, but I don't have tutorials or patterns, but I can sure try to explain what I did.

Apparently I used to have a phase when I did a lot of log cabins... Or I just surrounded the center square once with fabric strips. Those quilts you liked were all made that way except one.
1. Deciding colors. Place your fabrics around center piece and take close pictures of various different placements. Choose the one you like the best. This project has an example picture

2. Cut center pieces and strips to make the log cabins and make the blocks. If I remember correctly center square was the same width as the strips.
3. Play with the placements, orders and rotate blocks to find the look you like
4. Add strips between blocks if you like. Notice that the two bluish quilts you commented on have the same patchwork block but different placement of sashing.
